Welcome back!

I’m posting part two of the September blog in just under the wire. The Harvest moon is coming tomorrow, and October is going to be a fantastic month!

I have five dishes to share that are fun, easy to make, and delicious.


1. Starting with a cheese and olive plate. Easy! Just pick two to three of your favorite cheeses, or experiment with something new. I picked two totally different but equally strong cheeses. Gorgonzola and Black Truffle Pecorino are the two I picked and served them with my favorite, 34 Degrees Rosemary crispbread, and kalamata olives.

I paired this with Chablis (un-oaked Chardonnay) but I think Arneis would be even better.

2. Second in the lineup is Black Cod, bay scallops, shrimp, and calamari ceviche. This can be served as an appetizer or main course. I combined two different recipes for this one. From the Black Cod Ceviche Recipe I included mango and avocado, and from the Scallop Recipe I added orange juice and marinated everything together. Bottom line – acid equals ceviche. The rest is flavor preference. Wine pairing for this dish was Sauvignon Blanc. I think Verdejo would be great too.

3. Bring the BEEF! Nothing like the classic steak and potatoes. Add green beans for your heart, and a bottle of red wine – done! Rare, to be specific. Some will argue and that’s okay. It’s why we have microwaves. Ha! Pair this with a robust red – Tempranillo, Malbec, Cabernet.

4. Shifting gears to Green Chef’s Keto meal selection. I really liked the Kale Salad with Pork. This dish has kale, pork, roasted red beets, radishes, swiss cheese, and sunflower seeds. I can’t link the recipe, but if you’re interested in trying it, I linked the website. Incline Lemongrass Cider paired well with this dish.

5. Ending with my all-time favorite – PIZZA. The pizza dough is from Trader Joe’s and you can go carte blanche with the toppings. I like to keep it simple – tomato, basil, olive tapenade. Delicious! Any wine will do. Just sit back and enjoy.
